Sonata Beer Labs has an excellent relationship with several local breweries, especially Warped Wing Brewing Company. We have been doing some of their QC work for years and when we started selling Escarpment Labs Yeast, we reached out to them about doing a collaboration beer and John Haggerty, Brewmaster at Warped Wing, was generous enough to agree. And the first thing that came to mind was a farmhouse-style beer with Jotunn, the new hybrid yeast strain from Escarpment Labs.
Based on my previous brews with Jotunn, I knew I wanted something a bit darker and and John came up with the following recipe:
Simpsons Crystal Extra Dark
Dingeman Special B
We targeted an OG of 1.040 and an ABV of right around 5%. Hops was a small bittering addition of Warrior and a Motueka and Mosaic in the whirlpool. For fun we added some dried orange peel, coriander and black pepper in the hopback just before the plate chiller.
We pitched the yeast at ~ 90F and by the time we were done cleaning up, fermentation was already going like a rocket. We dry hopped a few days later when we hit FG with more Motueka and Mosaic.
